Description

These are so easy and melt in your mouth! They're great for a little dessert after a too big meal because they're just a couple bites each.

Ingredients:

1 1 cup butter

2 6 ounces cream cheese, softened

3 2 cups all purpose flour

4 4 eggs

5 3 cups packed brown sugar

6 4 tablespoons melted butter

7 1 pinch salt

8 1 teaspoon vanilla extract

9 1 cup chopped pecans

Instructions:

1 To Make Pastry: Cream butter and cream cheese. Add flour and mix well. Make into 48 balls (about 1 1/2 teaspoons each); place one ball in each (greased with shortening) cup of a mini muffin pan . Use your fingers or a tart tamper to press out into a tart shell.

2 To Make Filling: Break the eggs into a bowl, but do not beat. Add sugar, melted butter, salt, vanilla, and pecans. Mix well. Fill the tart shells. Bake at 350 degrees F (180 degrees C) for about 30 minutes or until delicately browned (mine cook in about 20 minutes, but my oven is fast!) Cool briefly in pan (about 5 minutes), then remove to cooling racks to cool (I use a toothpick to help them release from the cups.)
